This Horizon Europe Cluster 6 topic funds development of AI algorithms to identify and quantify the tens of thousands of chemical compounds present in food — the "foodome" — most of which are not catalogued today. Current databases cover only around 150 food components against an estimated 100,000-plus substances actually present.
